Best HIIT Workout

egg hunt

Yes, this is exactly what it looks like. An Easter Egg Hunt, and its an epic one at that. So how does that make it a HIIT workout? I will tell you.

My mom has been doing Easter egg hunts since forever and the rule is they will continue until we both move out. Clearly neither of us have. The kicker is there is money in the eggs. So when I entered college and my younger sister entered high school, she grew much taller than me and the egg hunt got crazy. Since then my parents and boyfriend literally sit back and laugh so hard they cry at how ridiculous we are.

During last nights battle I got knocked down, my sister was on my back and I proceeded to crawl across the living room. We wrestled until we both got up and somehow spotted the same egg on top of the mantle and boom! We both sprinted towards it trying to push and pull the other down. More times than not I found myself in a headlock and had to wrangle myself out of it. We both were jumping onto and off furniture, held ourselves in plank positions to reach out and grab eggs so the other sister could not get to it, and we both had to pull the other away from getting an advantage into another room.

After a brutal 20 minutes, I finally beat my younger sister with 1 egg and before we could celebrate we had to literally catch our breath and wipe the sweat off of our faces.

So a true HIIT cardio workout, no, but if you only saw what went on last night you would agree that it was an intense workout!

With all that said I worked up quite the appetite and decided to meal prep something delicious! Vegetable lasagna! I also got some protein bars, carrots and strawberries this morning at the grocery store.

Recipe:

*Preheat oven to 450

*Mix marinara sauce with ground turkey in a bowl (you do not need to cook the turkey first)

Slice the eggplant and layer the bottom of a tray

Slice zucchini long ways and layer on top of the eggplant

Layer half of the sauce and ground turkey mixture on top of the veggies

Add light layer of cheese (I used low fat mozzarella)

Add the rest of the sliced eggplant on top to form a new layer

Add the rest of the sliced zucchini

Layer second half of the sauce and ground turkey mixture

Top it off with cheese

*Cover and bake in oven for 1 hour

*Enjoy!
